Ginger is an amazing spice and medicinal. There is strong research support for its use for the stomach as well as the joints. The dried spice retains much of its unique characteristics though drying does change the actual compounds.
In cooking 1 tsp fresh grated ginger = 1/4 tsp of dried ginger, a 4:1 ratio. 2 TBSP of fresh ginger = 1.5 tsp of dried ginger.
